Fall Treats!



 
Fall is here. I love this time of year all the beautiful trees are changing colors. The crisp feeling in the air. I start thinking about warmer clothes, Halloween and delicious fall treats.  

I made a batch of pumpkin energy bites. A new version of my peanut butter protein balls! Shaklee just introduced a new protein powder flavor! Only here until December 31. Vanilla Chai, it is so good. My kids love it.

Pumpkin Energy Bites

  
Prep Time: 10 minutes
Yield: About 25 1-inch balls

Delicious and healthy energy bites.

Ingredients

  • 8 oz. (about 1 packed cup) chopped hazelnut
  • 1/4 cup Agave or  honey
  • 1/4 cup pumpkin puree
  • 1 Tbsp. flax seeds
  • 1/2 cups Shaklee 180 Vanilla Chai
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/4 tsp. ground nutmeg
  • pinch of salt
  • 1 cup old-fashioned oats (dry, not cooked)
  • 1 cup toasted coconut flakes
  • 1 cup toasted pumpkin seeds

Method

Combine the hazelnuts, toasted pumpkin seeds, agave or honey, pumpkin puree, flax seeds, Shaklee 180 Vanilla Chai, cinnamon, ginger, nutmeg and salt in a food processor, and pulse until smooth and combined.
Transfer the mixture to a large bowl, and stir in the oats, coconut flakes until evenly combined. Cover and refrigerate for at least 30 minutes.
Once the mixture is cool (and easier to work with), use a spoon or cookie scoop to shape it into your desired size of energy balls. Alternately, you can line a small baking pan with parchment paper, and press the mixture evenly into the pan, let it cool, and then cut into bars.
Store covered in the refrigerator for up to 2 weeks.

Vanilla Chai Smoothee

5 or 6 ice cubes
1 cup milk (almond milk whatever you prefer)
1/8tsp Cinnamon
1/8tsp nutmeg
1 packet Slevia (optional)

Pumpkin Pie Smoothee
5 or 6 ice cubes
1 cup milk (almond milk whatever you prefer)
1TBS Pumpkin Puree
1/8tsp Cinnamon
1/8tsp nutmeg
1 packet Slevia (optional)
